Meet Chef Carlitos
Carlos Sánchez is an Ecuadorian chef with more than 25 years of experience in the gastronomic industry. His career began at a very young age in Cuenca, Ecuador, and over the years he has worked in different kitchens and restaurants, developing from cook and Line Cook to holding positions as Kitchen Manager, Sous Chef and Chef.
MY KITCHEN AND MY ROOTS
Carlos's cooking comes from his Ecuadorian roots and the flavors he grew up with. He honors the essence and tradition of Ecuador's recipes while adding his own experience and creativity to create interpretations of his own. For him, cooking isn't just following a recipe, it's knowing where the flavors come from, respecting the roots, and having the freedom to build something new from them.
MI COCINA Y MIS RAÍCES
La cocina de Carlos nace de sus raíces ecuatorianas y de los sabores con los que creció. Respeta la esencia y la tradición de las recetas del Ecuador, pero les suma su experiencia y creatividad para crear interpretaciones propias. Para él, cocinar no es solo seguir una receta: es conocer de dónde vienen los sabores, respetar las raíces y tener la libertad de crear algo propio a partir de ellas.

His vision is to blend Ecuadorian cuisine with flavors and styles familiar to American diners, creating dishes that bridge two cultures. Each plate is a chance to present Ecuadorian food in an approachable, inviting way, with modern technique and presentation, without losing its roots.

Cada plato es una oportunidad de presentar la comida ecuatoriana de manera accesible y atractiva, con técnicas y presentaciones modernas, sin perder sus raíces.
